Description

High-Pressure Processing (HPP) is a cutting-edge USDA–approved all-natural process that utilizes intense cold water pressure to protect against harmful bacteria without affecting a food product’s taste, texture, appearance or nutritional value.

Products are packaged, sealed and then placed in a cylinder-shaped pressure chamber where it is surrounded by water. Up to 87,000 pounds of water pressure are exerted per square inch, protecting against harmful bacteria and sealing in freshness and flavor naturally, with no preservatives needed.

HPP is one of the latest technologies that utilize non-heat methods to preserve food. It has been studied by scientists for more than a hundred years, but only within the past 20 years have companies started applying HPP commercially.

Benefits

The many benefits of HPP include:

  • Enhances Flavor: Food boasts its most natural flavors because no flavor-changing preservatives are added
  • Maintains Freshness: HPP protects against spoilage-causing bacteria, producing food that stays fresher longer
  • Protects Naturally: Food is preserved using water pressure, not preservatives

Companies that use HPP:

HPP works best on moist foods because they can withstand high water pressure without being crushed. Only a handful of companies in the United States currently use this cutting edge food preservation process.

Hormel Foods employs an HPP technology system, called TRUETASTE™ technology, on its Hormel® Natural Choice® products, resulting in meat that is 100 percent natural with no preservatives, no added nitrites and nitrates and no artificial colors or flavors. With no preservatives added, the meat retains its natural taste.

Other companies that use HPP include Motivatit (Gold Band Oysters and Gold Band Clams) and Fresherized Foods (AvoClassic Guacamole and Frütmost Smoothies).
