Ingredients
| 1 | clove garlic, chopped |
| 3 | tablespoons olive oil, divided |
| 1 | tablespoon turmeric |
| 1 | teaspoon salt |
| 1 | cup orzo pasta |
| 1 | (15.5-ounce) can garbanzo beans, drained and rinsed |
| ½ | cup golden raisins |
| ½ | cup water or chicken stock |
| ¼ | cup fresh lemon juice |
| 2 | tablespoons red wine vinegar |
| ¼ | cup chopped parsley |
Directions
In skillet over medium-high heat, cook garlic in 1 tablespoon olive oil 30 seconds or until fragrant. Add turmeric and salt, and cook 30 seconds or until fragrant.
Add orzo and cook 1 minute. Add garbanzo beans, raisins and water. Bring to a simmer and cook 5 to 10 minutes or until orzo is tender.
Place pasta in serving bowl and add remaining 2 tablespoons olive oil, lemon juice and vinegar. Garnish with parsley.
