Bacon Cranberry Baked Brie

1 (8-ounce) wheel Brie cheese
4 slices HORMEL® BLACK LABEL® Bacon, cooked
1 shallot, thinly sliced
¼ cup apricot preserves
1 cup dried cranberries
1 teaspoon chopped fresh rosemary leaves, finely chopped
Garnish: fresh rosemary sprigs


  1. Heat oven to 350°F.

  2. Place brie on parchment paper-lined baking sheet. Bake 5 to 10 minutes.

  3. Meanwhile, in small saucepan, cook bacon until crisp. Remove from pan; cool and crumble. In same saucepan, cook shallots until tender and lightly browned. Stir in preserves and remaining ingredients and cook 1 minute. Stir in bacon.

  4. Spoon bacon mixture over brie. Garnish with rosemary sprigs, if desired. Serve with crackers, fruit or baguette slices.
