1 (12-ounce) package HORMEL® BLACK LABEL® Bacon Original, chopped
2 onions, sliced
1 teaspoon dried thyme
cup balsamic vinegar
cup light brown sugar
1½ teaspoons kosher salt
1 teaspoon freshly ground black pepper


  1. In large heavy skillet over medium heat, cook bacon 15 to 20 minutes, stirring occasionally, until crisped and browned. Remove bacon to bowl with slotted spoon.

  2. In same skillet, add onions to bacon fat. Cook 35 to 40 minutes, stirring occasionally, until onions are deep golden brown. Stir in thyme.

  3. Stir in balsamic vinegar, brown sugar, salt and pepper. Combine until thick and glossy. Remove from heat. Let cool.

  4. In bowl of food processor, place onion mixture and reserved bacon. Pulse briefly to combine.

  5. Serving suggestion: Serve on crostini topped with goat cheese.
