Ingredients

 
1 (15-ounce) can HORMEL® Chili no beans
1 (14.5-ounce) can diced tomatoes
¾ cup low-sodium chicken broth
½ cup chopped kale
2 large eggs
chopped green onions to garnish
queso fresco to garnish

Directions

  1. In large bowl, combine chili, tomatoes and broth. Pour 1 cup mixture into microwave safe dish. Cover mixture and heat on HIGH (100%) 2 minutes. Refrigerate or freeze remaining chili mixture for later use.

  2. Crack eggs over mixture. Cover and heat in microwave on HIGH (100%) 2 ½ minutes or until eggs are cooked to desired degree of doneness. Garnish, if desired.
