Chef Tony Finnestad has worked in more than his fair share of upscale dining establishments. Nevertheless, he knows how to keep it real, and that’s just one of the reasons we love him. As the head chef for Hormel Foods Foodservice – and the father of two preschoolers – he understands that delicious, nutritious, easy-to-prepare meals are where it’s at.

Condiments are nice to have on hand, because you can … change things and add things to make things a little bit different.

SPAM® Fried Rice

  • Total Time

    20 minutes
  • 1 cup cubed SPAM® black pepper
  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 1 1/2 cups cooked rice
  • 3/4 cup frozen mixed vegetables, thawed
  • 2 teaspoons soy sauce, if desired
  • 2 eggs
  • 2 tablespoons cilantro, roughly chopped
  • 2 teaspoons hot sauce, if desired

Instructions

In medium skillet, turn heat to medium and let skillet get hot. Add SPAM® black pepper and let sear and caramelize. Add onion, garlic and ginger and cook 3 to 4 minutes, stirring occasionally. Stir in cooked rice, mixed vegetables and soy sauce, if desired. Move the SPAM® mixture to one side of skillet and crack eggs directly into skillet; cook and stir eggs until scrambled. Mix eggs into SPAM® mixture. Serve with chopped cilantro and hot sauce, if desired.
