|1||(12-ounce) can SPAM® Less Sodium, diced|
|1||red onion, chopped|
|12||ounces ube, peeled and cubed (about 2 cups)|
|1||red bell pepper, chopped|
|¼||cup fresh parsley, chopped|
|¼||teaspoon freshly ground pepper|
|Fried eggs, as desired|
In 10-inch cast-iron skillet, heat oil over medium heat.
Cook onions 3 minutes or until translucent.
Add ube and cook 7 to 10 minutes or until golden.
Stir in SPAM® Less Sodium and red bell pepper. Cook 3 to 5 minutes or until crisped and browned.
Stir in chopped parsley and pepper. Serve with eggs.
