In recent years, the holiday has evolved into a celebration of Mexican culture and heritage and has been growing in popularity in the United States. Cinco de Mayo is also a great opportunity to try new foods and drinks that you may not have experienced before. Mexican cuisine is known for its bold flavors and unique ingredients, and exploring these dishes can be a fun and delicious way to celebrate the holiday.

Of course, the taco is a staple in any Cinco de Mayo celebration – but this taco has a twist – Chicken Tinga! Made in the air fryer, these crispy tacos will be a favorite you’ll want to make all year long.
Air Fried Chicken Tinga TacosEasy Meals
|2||cups shredded, cooked chicken breast|
|15||street taco style flour tortillas|
|Spray olive oil|
|8||ounces HERDEZ® Traditional Guacamole Mild|
|½||cup pickled red onions|
|½||cup crumbled cotija cheese|
|1||teaspoon olive oil|
|½||yellow onion, chopped|
|1||tablespoon minced garlic|
|½||cup crushed tomatoes|
|¼||cup chicken stock|
|¼||cup HERDEZ® Chipotle Salsa Cremosa|
|2||chipotle peppers in adobo sauce|
|1||teaspoon Mexican oregano|
Heat olive oil in medium saucepan, over medium-high heat, and cook onions 3 minutes, or until translucent. Add garlic and cook 1 minute. Add Tinga sauce ingredients and cook for another minute. Add to blender, carefully blend until smooth.
Add Tinga sauce back to saucepan and stir in chicken.
Add about 2-3 tablespoons of Tinga chicken to each tortilla. Close with toothpick and add to air fryer. Repeat until air fryer has full layer of tacos. Spray with olive oil.
Air fry in batches at 375° for 3-4 minutes.
Top with HERDEZ® Traditional Guacamole Mild, pickled red onions and cotija cheese.

Chipotle Steak KabobsEasy Meals
|1||pound sirloin steak, cut into 1” pieces|
|1||cup HERDEZ® Chipotle Salsa Cremosa|
|1||red onion, cut into 1” pieces|
|1||orange bell pepper, cut into 1” pieces|
|1||zucchini, cut into ½” rounds|
|Salt and pepper|
Add steak to large plastic bag, season with salt and pepper. Add HERDEZ® Chipotle Salsa Cremosa, seal bag tightly and shake to coat evenly. Let marinate at least 2 hours in refrigerator.
Build kabobs – skewer steak and vegetables, alternating. Season vegetables with salt and pepper.
Grill kabobs on medium-high heat for 5-7 minutes per side, or until steak is cooked through.
Brush on additional HERDEZ® Chipotle Salsa Cremosa, if desired.

Grilled Poblano Chicken WingsEntertaining
|2||pounds chicken wings|
|Salt and pepper|
|1||cup HERDEZ® Roasted Poblano Salsa Cremosa|
Add chicken wings to large plastic bag, season with salt and pepper. Add HERDEZ® Roasted Poblano Salsa Cremosa, seal bag tightly and shake to coat evenly. Let marinate at least 2 hours in refrigerator.
Grill wings on medium-high heat for 15-20 minutes, or until they reach internal temperature of 165°.
Brush additional HERDEZ® Roasted Poblano Salsa Cremosa, if desired.
Tip: Flip wings every 5 minutes to help them crisp and cook evenly.
This refreshing and zesty salsa ‘caviar’ is packed with vibrant color and bright flavors!
|15||ounces HERDEZ® Traditional Salsa Medium, refrigerated|
|2||cups corn, drained|
|1||cup black beans, drained and rinsed|
|1||cup diced red onion|
|1||bunch cilantro, chopped|
|2||jalapenos, finely chopped|
|2||tablespoons HERDEZ TAQUERIA STREET SAUCE® Cilantro Lime|
|8||ounces WHOLLY® Diced Avocado|
|Salt and pepper|
|Tortilla Chips for Serving|
In large bowl combine all ingredients, except avocado. Mix well, then add avocado and stir gently to combine. Salt and pepper to taste.
Serve with tortilla chips.
